
Fish Tacos With Chipotle Seasoning
When we visited Los Cabos, we travelled through few spots on the way to scenic spots.
We had coconut water on a way, it was really good. I was about to throw away the coconut, but the vendor stopped me. He cut open the whole coconut and removed layer of white coconut and transferred into small plastic bag. He added red chili pepper, salt and juiced it with wedge of lime. This was very unusual to see coconut prepared this way. It really tasted very good.
What that has to do with fish tacos? Well, the next stop was a road side taco restaurant. I was bit skeptical first to eat there. I typically order dishes with chicken but, the place were known for the best fish taco. So, we went along with the recommendation. This was the best fish taco I ever had.

Chipotle Fish Tacos
I have tried fish taco many place since then, but that taste and spice level of taco which I had in Cabos just stayed in my mouth. I just wanted to mimic that. It did come out surprising well!
I opt for some variation, in lieu of tomatillo sauce, I used guacamole spread instead.
Fish Tacos is a good dish for dinner or lunch. Crisped the fish in the Air Fryer, it can be baked in oven or in a pan. Season the veggies in a pan. Just assemble the lightly crisped corn-flour tortilla by layering spinach, veggies and fish. Spread the guacamole on the taco and enjoy!

Fish Tacos With Chipotle Seasoning
Fish Tacos is a good dish for dinner or lunch. Crisped the fish in the Air Fryer, it can be baked in oven or in a pan. Season the veggies in a pan. Just assemble the lightly crisped corn-flour tortilla by layering spinach, veggies and fish. Spread the guacamole on the taco and enjoy!
Ingredients
Marinate Fish
- 1 Tablespoon chipotle seasoning
- 1 Tablespoon olive oil
- 4 Cloves garlic minced
- 1/4 Teaspoon salt
- 1/2 Teaspoon pepper
- 1/2 Teaspoon chili pepper powder
- 3/4 Pound fish fresh flounder fish or tilapia/catfish
- 2 Tablespoon lime juiced
- 2 Tablespoon water
Stir fry Veggies:
- 1/2 Red bell pepper sliced
- 1/2 Green bell pepper sliced
- 1/2 Red onion sliced
- 2 cloves garlic minced
- 1 tablespoon of chipotle powder
- 1/2 Teaspoon chili pepper powder
- 1/4 Teaspoon salt
- 1/4 Teaspoon pepper
Instructions
Marinate Fish:

In a bowl, prepare marinate with mixture of chipotle seasoning, salt, pepper, chili pepper, oil, lime juice and water.

Marinate fish on plastic wrap and seal.

Seal fish in a plastic wrap and place it in a refrigerator for at least one hour. You can marinate fish in the afternoon and use it for dinner.
Air Fry Fish:

Spray the air frying pan to grease (do not use straight oil to grease)

Set Air Fryer to preheat at 360 Degree F.

Once Ready display comes on, remove air frying pan.

Remove plastic wrap and place the fish on the air frying pan mesh grill.

Set setting for the fish on the air fryer at 400 Degree F for 8 minutes.

Once done, for more crispy, flip the fish carefully and keep it in the Air Fryer for additional 4 minutes.
Guacamole:

Meanwhile prepare Guacamole per instruction (double-click for recipe)

Stir-fry veggies:

In 12 inch pan, heat oil at high setting, add garlic, red pepper and green pepper and stir for about 1 minute.

Reduce heat little bit, add onion and stir for about 1 more minute. Add chipotle seasoning, salt, pepper, chili pepper and stir for about 1 minute.
Fish taco:

In a pan put 1/2 teaspoon oil and lightly crisp the con-flour tortillas.

To assemble taco, layer baby spinach, veggies, and chipotle fish.

Spread the guacamole on a taco, fold it and serve.
