Eggplant BitesWhenever we make Eggplant parmesan (though we use Mozzarella cheese instead), we make Eggplant Bites. It’s a very simple appetizer to make and its tastes delicious.

It’s really not much different than veggie pizza, except for crust, use eggplant slices. You can have variety of the toppings, like chicken, clam etc. if you plan to use non-vegetarian topping, just cook it separately, this way you are sure of not having undercooked meat.

Eggplant Bites is a very simple appetizer to make, it looks colorful and tastes delicious.

It is supper easy to make, make slices of eggplant, dip it in egg white, and coat both sides with spicy breadcrumbs. Bake it on top of the griddle, flip and bake other side to brown it a little bit.

Coat baking sheet with the olive oil, to prevent eggplant from sticking to the pan. Line up bites evenly on pan and place the ingredients on the top. That’s pretty much to it for the preparation.  Bake it in oven till cheese melts and your appetizer is ready to eat!

To make it dairy sensitivity use soy or lactose free cheese. For gluten free recipe, skip breadcrumbs.

Ingredients

  • 1 Eggplant sliced
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1/2 Teaspoon sea salt
  • 1/2 Teaspoon black pepper
  • 1/2 Teaspoon red pepper flakes
  • 1/2 Cup red bell pepper cubed
  • 1/2 Cup green bell pepper cubed
  • 1/2 Cup red onion cubed
  • 1/2 Cup mushroom cubed
  • 1 Cup marinara sauce
  • 1/2 Cup mozzarella cheese use lactose free cheese for dairy sensitivity.
  • 2 egg whites
  • 1/2 Cup breadcrumbs spicy

Instructions

Topping:

  1. In small bowl, mix olive oil, garlic, salt & pepper.
  2. Add red bell pepper, green bell pepper, red onion, and mushroom.
  3. Set aside.

Bake eggplant slices

  1. Make eggplant slices about 2 pennies thick.
  2. Dip slices in egg white
  3. Coat slices with spicy breadcrumbs
  4. Bake both sides of slices on Griddle or pan till it is brown.

Bake eggplant:

  1. Coat pan with the olive oil
  2. Evenly line up the baked eggplant slices
  3. Place tablespoon of marinara sauce on each eggplant slices
  4. Place cheese and topping on the eggplant slices.
  5. Bake at 350°F for 10-15 minutes or until cheese melts.
