This Zucchini bread recipe is probably easiest desert to make and yet always comes out great. It is a great dish to summer time barbeque desert.

This bread uses four egg whites and one whole egg so it is very low in cholesterol. It uses canola oil which adds healthy fat to your diet and no butter thus makes it heart healthy.

This is a perfect dairy free easy to make recipe without any artificial ingredients or colors which uses whole wheat flour.

This recipe makes 27 pieces, so it does not have too much carb. Zucchini provides good source of fiber to your meal.

Ingredients

  • 1 Cup canola oil
  • 4 Egg whites
  • 1 Egg
  • 2 Cup cane sugar
  • 4 Cup wheat flour
  • 2 Zucchini shredded (medium size)
  • 1 Teaspoon natural vanilla extract
  • 1 Teaspoon cinnamon
  • 1.5 Teaspoon baking power
  • 1.5 Teaspoon baking soda
  • 1 Cup almond sliced
  • 3/4 Cup craisins
  • 1.5 Teaspoon salt

Instructions

  1. Preheat the oven to 350 degree F.
  2. Beat eggs, oil and sugar in a bowl.
  3. Add zucchini, almonds, craisins, vanilla extract, cinnamon, baking powder, baking soda and salt.
  4. Stir the mixture well in a bowl.
  5. Add flour and stir well.
  6. Grease 9x12 inch pan and pour the mixture from the bowl.
  7. Bake in the oven for 45 minutes, dip the toothpick in the bread to make sure the toothpick comes out clean. If needed, keep bread in the oven bit longer.
  8. Remove bread from the oven, place it on a rack to cool it for about 10 minutes
  9. Cut bread into desired size pieces and serve with no topping or with your favorite topping. This recipe is for 27 generous size pieces.
