Roasted Red Potatoes

Potatoes are good source of starch, potassium and dietary fiber. 100g of potatoes provides 70 calories and It has nearly no fat and contains no cholesterol.

We made roasted potatoes as a side dish, together with asparagus for salmon main dish and it turned out to be a perfect combination.

Try this side dish with chicken, pork or fish.

Garlic Roasted Red Potatoes

It’s hard not to like potatoes, everybody loves potatoes. Simple to prepare this side goes with most main dishes.

Ingredients

  • 2 Tablespoon olive oil
  • 5 Red potatoes
  • 3/4 Teaspoon kosher salt
  • 1/4 Teaspoon black pepper
  • 4 Cloves garlic minced
  • 1 Teaspoon Italian seasoning
  • 3 Stalks fresh parsley optional

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Wash and cut the potatoes in quarters and place in oven safe casserole.
  3. Pour the olive oil, add salt, pepper, garlic and Italian seasoning..
  4. Mix it well, cover the casserole with aluminum foil.
  5. Place casserole in oven for 20 minutes.
  6. Take out, remove aluminum foil, stir and place back in oven.
  7. Take the casserole out when potatoes are slightly brown. Taste to make sure it is cooked right, put back in oven if needed for longer period.
  8. Serve potatoes with main dish. Optional - garnish with parsley.
