We had our nephew and his friend visiting us. We typically have traditional dishes when our sibling visits us. But, when we have youngsters, we try to make what they would enjoy more. Oven Baked Salmon with juicy Bruschetta Topping became an ideal dish for a company.
Salmon contains significant amount of omega-3 fatty acid and is considered heart healthy. Research indicates that omega-3 fatty acid can decrease the risk of heart disease by reducing inflammation. Alaska, Pacific and Atlantic salmon, they are all good varieties for a good dish.
Salmon comes in couple of varieties. Sockeye and Pink, nutritionally both have similar benefits. Sockeye has strong rich flavor compared to pink.
Sockeye salmon typically goes well with barbeque or any other sweet glazes.
Pink salmon is preferred, if you want to have your desired flavor to go with it. The mild flavor is easy to season with different herbs and lemon, etc. Though both varieties are popular and are preferred depends upon personal choice.
This is actually our daughter’s recipe, though bit modified. So, when kids come home for holidays, this is one of the dishes we make. And good part about it is, it does not require much effort to prepare at all.
Typically the salmon is cooked with skin on bottom side which you can slice it off, if desired before serving. Our daughter prefers skin removed and our son opposite!

Easy Oven Baked Salmon with Bruschetta Topping
A perfect dish for a Fish Friday! This is a great alternative to typical Fish Fry Friday. Create your very own flavorful gourmet dish which can be prepared with not too much effort.
Ingredients
- 2 tomatoes plum totamoes, chopped
- 1 onion small red onion, chopped (half, if large)
- 4 Cloves garlic minced
- 1 Teaspoon kosher salt add more to taste
- 1 Teaspoon black pepper freshly ground
- 2 Teaspoons olive oil extra-virgin
- 2 Teaspoon Italian seasoning
- 24 Ounce salmon 4 fillets
- 1 Lemon wedged to 4 pieces
Instructions
Bruschetta Topping:

Combine tomatoes, onions, garlic, salt, black pepper, Italian seasoning and olive oil in a bowl.
Bake Salmon

Preheat the oven to 400 degrees F.

Brush oil on baking dish.

Put the salmon fillets evenly spaced in the baking dish.

Layer the Bruschetta toppings equally on fillets.

Put it in the oven for 20-25 minutes till the outside is nice and pink.

Check with the fork to make sure it is nice and flakey.

Remove and place salmon on a plate, squeeze lemon wedge, season with black pepper, salt as desired and serve with baked potatoes and asparagus.

This dish can also be served with rice pilaf.
