
Chicken Porridge
Chicken Porridge is a nice comfort meal you would crave for. It is easy to prepare and is very satisfying dish that you would enjoy with your family.
Lately we have been taking longer summer vacations, we start vacation with visiting our daughter first and then go on mini site seeing places and finish vacation with visiting our son.
Vacation means eating out most of the times, so we were looking forward to have the home cooked meal. Our son and daughter-in-law surprised us with home cooked meal (typically we go out to eat).
They prepared Chicken Porridge for us. There are many ways to prepare rice porridge. The flavor and taste varies based on the cooking style of the country.
They went out to the neighborhood grocery store and picked up organic chicken, fresh garlic, onion, jalapeno pepper, lime, ginger, scallion and organic chicken stock. Together with other ingredients, in about an hour we had nice dinner together.
Recipe for Chicken Porridge

Chicken Porridge
Chicken Porridge is a nice comfort meal you would crave for. It is easy to prepare and is very satisfying dish that you would enjoy with your family.
Ingredients
- 2 Tablespoon canola oil
- 1 white onion chopped (medium size)
- 10 Cloves garlic finely chopped
- 1 Inch ginger finely chopped
- 2 Jalapeno chopped in small pieces
- 1/2 Cup jasmine rice
- 16 Ounce chicken stock organic and cholesterol free
- 1 Tablespoon fish sauce optional
- 1 LB chicken thigh organic trimmed chicken thigh
- 2 Eggs
- Chili sauce
- Salt
- Black pepper
- 2 Limes
- 4 scallion 4 stalk finely diced
- water
Instructions

Rinse jasmine rice, cover with water and set aside for 10 minutes.

Boil eggs and set aside.

Heat oil in a large (4 quart) heavy bottom pan, add garlic, ginger and onion.

Stir till it is lightly brown (for about a minute).

Add chicken, add 1/2 teaspoon salt, 1 chopped jalapeno and stir till chicken is no longer pink.

Remove water from the jasmine rice and add to the pan.

Add chicken stock, stir and cover the pan

Heat and stir occasionally till rice is fully cooked.

Add water if it is too thick, add fish sauce, and stir.

Add chili sauce, salt and black pepper to taste.

Garnish chicken porridge with half eggs, scallion, lime and serve.
